I think the big difference is Favreu (sp) actually likes and understand Star Wars thus The Mandalorean feels like Star Wars. It's the key thing that always separates good genre films from the bad ones.. respect.
The other movies fall into that trap of a Director/Writer who either doesn't get it, or thinks they are better than it so they kinda look down on it and try to adapt it to what they think will be good. You end up with something that not only sucks but doesn't even feel like Star Wars while sucking.
JJ Abrahms doesn't really get it. He's not a creative.. he's a good artisan but not a good conceptual person. He's the guy to build your house but not the guy to design it.
Rian Johnson is a dick who thinks he's better than everyone else so he just came in and destroyed the whole fucking thing. Haha he says to himself. He's the guy to burn your house down.
Kathleen Kennedy is some idiot that got lucky and climbed the ranks. She doesn't know what the fuck she's doing but likes playing political games. She's the receptionist at the contractor firm that will lose your permits then be a complete bitch about it when you try to get an answer as to where they went.
