I grew up an hour North of Philly and cheesesteaks are slightly different up there. They include tomato sauce or mild chili sauce, little bit of onion and American cheese, NEVER cheez whiz. If in Allentown at PinFest the Farmers market has a valid cheesesteak, Zandy’s is nearby and legit, as is Yocco’s. A good fresh roll makes all the difference.
Much rarer was a ‘Weber’ - basically a California cheesesteak; meat, cheese, lettuce, tomatoes & mayo. This has very little to do with a real cheesesteak.
I was a short order cook up there when I was younger and made a killer cheesesteak, pickles, hot peppers & mushrooms optional.
When I see ‘Philly Cheesesteak’ down here I just laugh and shake my head.

Oh…I see Charleys is from Columbus, OH and still based there. I went to college in Ohio and they have no idea what a cheesesteak is.
